Cold Season Remedy!
You’re sick, I’m sick, we’re all sick!
With a sniffling nose and an almost empty tissue box, I am writing you a very quick recipe for an easy, feel-good cold remedy! I don’t know what it is about Chicken Noodle Soup that brightens up our spirits during a cold, but heck, if it works, I will drink it up.
– Two chicken breasts, remove the skin and take off any bones still attached, BUT, don’t throw it out, we want this to flavour the soup! Chop your chicken into bite-size pieces.
– Optional- one strip of bacon, chopped.
– Two garlic cloves, minced.
In a frying pan, add a tablespoon of olive oil and add in your chopped bacon then your garlic. Fry until your bacon has cooked and garlic had slightly turned in colour. Then add in your chopped chicken and mix into the bacon and garlic then season with salt and pepper. → I decided to add bacon to flavour the chicken with a nice and smokiness taste, if you like bacon, you do not want to skip this step.
fry for about 10 minutes.
*While that is cooking, In a pot, add your six cups of water and begin to boil*
Add in two Chicken Bouillon into your water, I used the Maggi brand; it’s great! And then add ¼ cup of minced onions, chicken bones (if there was any) and allow to boil for five minutes. After the time is up, proceed to add in your cooked chicken (add all the juices from the pan ass well, they’re great flavours!
Stir in two chopped carrots then top it off with a blend of poultry herbs (parsley, rosemary, sage, thyme, and rosemary) ← you can buy this pre-packaged at your local grocer!
Allow to boil and then turn your heat down to low and let simmer for thirty minutes, we want all the herbs to really bathe in the chicken stock to create an amazing flavour.
After thirty minutes, add in three handfuls of Egg noodles and cover for another 15 minutes (taste the noodles to see if they have captured the flavours of the chicken and herbs).
Pour into bowls and garnish with parsley,
And there you have it, smokey and flavourful chicken noodle soup!
