It’s mid January, it’s freezing, and I’m too lazy to make something extravagant, so I present to you my super tasty but super easy Lemon Chicken!
*Preheat oven to 375 Degrees Celsius*
→ Take your chicken thighs and drumsticks and season with salt and pepper.
→ Turn the heat up to medium high and In an oven safe pan add a tablespoon of olive oil
→ Add in your your garlic cloves then add in your chicken
→ After a minute or two flip your chicken onto the other side – all we’re doing is browning the skin-
→ After flipping your chicken, proceed to add the butter and the lemon juice
→ Allow the butter to melt then add your potatoes,
→ Take off heat and proceed to add your parsley on top.
*cover with tinfoil and place in the oven for 45-65 minutes depending on the cut*
Take your chicken out of the oven and garnish with fresh parsley

-Salt and Pepper – 4 TBL butter
-¼ Lemon Juice -Garlic x3
